Potato Skin Bites

INGREDIENTS

3 russet potatoes, scrubbed clean

2 tbsp. olive oil

Kosher salt

Freshly ground black pepper

Pinch cayenne pepper

1 tsp. garlic powder

1 1/2 c. shredded cheddar

6 slices bacon, cooked and crumbled

Sour cream, for serving

3 green onions, thinly sliced

DIRECTIONS

Preheat the oven to 400 ℉. Potatoes should be cut into 1/2" coins.

Toss the potato rounds with olive oil in a large mixing bowl. Toss with salt, pepper, cayenne pepper, and garlic powder until well covered. Place on a large baking sheet in a single layer. Bake for 30 to 40 minutes, flipping halfway through, until gently browned and soft.

Each potato round should be topped with cheese and bacon. Broil for about 2 minutes, or until the cheese is melted.

Top each potato with a dollop of sour cream and a sprinkling of green onions.
