CRANBERRY PECAN GOAT CHEESE TRUFFLES

Goat Cheese (You can also use any other soft mild cheese you do like, feta works great as well, or just the cream cheese).

Cream Cheese.

Cinnamon.

Honey.

Pecans.

Dried Cranberries.

Fresh Parsley.

Instructions

These goat cheese truffles may appear spectacular, but trust me when I say they are really simple to make. These goat cheese balls take me approximately 15 minutes to make from start to finish.

Combine: Combine the goat cheese, cream cheese, cinnamon, and honey in a large mixing bowl and whisk until light and fluffy. I prefer to use a hand mixer for this because it is MUCH simpler to combine the cheeses with a little electric power. After that, fold in a half cup of pecan chips.

Toppings: Line countertop with parchment paper. Toss together remaining pecan chips, dried cranberries and parsley in the center of the parchment paper.

Scoop: Using a large cookie scoop, scoop out one round of cheese filling and gently roll it in the cranberry/pecan mixture. Continue until all truffles have been rolled in coating.

Store: Refrigerate cheeseballs until ready to serve. You can make these up to three days before, just make sure and store them in an airtight container.

To Serve: Drizzle with honey, if desired. Serve with crackers, warm crostini or as is with a toothpick!
