Chicken with cherry tomatoes and basil

Tender Nitsiakos chicken, juicy cherry tomatoes and basil. With a salad next to them you have a filling meal in a few minutes.

Ingredients

1 chicken breast fillet, cut into thick strips

2 tablespoons olive oil

1 clove garlic, finely chopped

1 tablespoon sweet spice mix for chicken

juice of half a lemon

8 cherry tomatoes, cut in half

5-6 large basil leaves fresh, coarsely chopped

Salt & Pepper

Instructions

Put the olive oil in a non-stick pan and heat it well, but do not burn it.

Add the chicken, garlic, spice mixture, salt and sauté until the chicken is almost cooked through and browned. Turn it over to cook on the other side. Quench with lemon juice.

Add the cherry tomatoes and mix carefully. Once they come out, sprinkle with basil and serve with freshly ground pepper. You do not overcook them because you do not want them to dissolve and become a sauce.

Tips

  • The secret is to make the chicken juicy. With a knife carefully carve a piece to see it inside. The moment it turns from pink to white you should hurry to take it off the fire.
