Chicken Salad Rolls

100g shredded, cooked chicken

50g 'something crunchy' (celery, apple, radish, sweet pickle slices or a combination)

'Something oniony' such as 1 spring onion or 1/4 small red onion, chopped

65ml mayonnaise or plain yoghurt

Salt and freshly ground black pepper

2 wholemeal sub rolls

Method

Make this chicken salad the night before to let the flavors to melt-all you have to do in the morning is assemble. This will undoubtedly become one of your children's (and your) favorite lunches.

1) Stir chicken, the 'something crunchy', 'something oniony' and mayonnaise or yoghurt together until evenly coated. To taste, season with salt and pepper. (This can be made ahead of time and stored in the refrigerator.)

2) Distribute the salad mix evenly among the sub rolls. Wrap in parchment or greaseproof paper to prevent sticking. Send your child to school with a lunch box and an ice pack.

Cook's Note: These are also delicious with roasted turkey. Make it curried for adventurous eaters: 2 teaspoon curry powder, 20 grams chopped fresh coriander, and 25 grams sultanas.
