Quick Chicken Piccata

Ingredients

1/4 cup flour (all-purpose)
a half teaspoon of salt
a half teaspoon of pepper
4 chicken breast halves, boneless and skinless (4 ounces each)
1/4 cup cubed butter
1/4 cup chicken broth or white wine
a quarter-cup of lemon juice
Optional: fresh parsley, minced
Directions
Combine flour, salt, and pepper in a small bowl. Using a meat mallet, pound chicken breasts to a thickness of 1/2 inch. Coat both sides of the chicken in the flour mixture and shake off any excess.
Melt butter in a large skillet over medium heat. Both sides of the chicken should be browned. Bring the wine to a boil. Reduce heat to low and cook, uncovered, for 12-15 minutes, or until chicken is no longer pink. Lemon juice should be drizzled on top. Sprinkle with parsley if desired.
